3 eggs, well beaten
2 cup sugar
3 cup flour
¼ tsp baking powder
1 tsp baking soda
1 tsp salt
¾ tsp nutmeg
3 tsp cinnamon
1 cup oil
2 cup peeled and grated zucchini
3 tsp vanilla
Beat eggs, add oil, sugar, zucchini, and vanilla.
Add dry ingredients. Fold in 1 cup chopped nuts (optional)
Pour batter into well greased and floured bread pans, 2 large or several small tins.
Bake 325 about 50 minutes to 1 hour.
Cool slightly in pans. Remove to rack to cool.
(You can peel, grate, measure zucchini and put in freezer bags for winter use. 2 cups per bag)
