Quiche - Sherie

4 eggs
1 cup half & half
1 cup Monterey Jack cheese
½ tsp salt
Freshly ground pepper
A few grain of cayenne
½ cup sausage
½ cup minced onion
¼ cup sweet red bell pepper
2 T chopped green chiles
1 pie shell

Saute peppers, onion and sausage over medium heat. Whip eggs and cream together. Add onion, chiles and sausage. Pour into pie shell dotted with butter. Decorate with peppers, tomatoes, banana peppers or whatever you’d like.
Heat in a 450 degree oven for 15 minutes, then reduce heat to 300 degrees and continue cooking for 35 minutes.
