5 c cubed zucchini
¼ c onion, chopped
1 lb ground beef, browned
1 c sour cream
1 c cheddar cheese, grated
1 pkg stove top stuffing
1 c margarine, melted
1 can cream of chicken soup
Brown ground beef, add chopped onion. Mix the stuffing an flavor packet and add margarine, stirring to coat evenly. Cube zucchini into 1 inch pieces. Boil zucchini for approximately 10 minutes, then use the collinder to drain excess liquid. Mix the soup, sour cream, and cheese in a separate bowl.
Put half the stuffing mixture on bottom of 9x13 pan. Then layer the hamburger, then zucchini, then soup mixture and top with other half stuffing. Bake at 350 for 20-25 minutes.
