Nougat - Heidi and May

2 Cups Sugar
1/2 Cup Corn Syrup
1/4 Tsp Salt

Mix & Cook to 232º f. Beat 3 egg whites in warm bowl. Add 1/3 hot syrup and continue beating. Put syrup back on and cook to 252º f. Add remainder of syrup to egg micture. Then stir by hand or by mixer until it cools. Melt 6 tbsp butter, pour 1/2 the butter over the candy and add 1 tsp. Flour swiftly. Do not stir too much. Add 1 tsp vanilla. Pour out in pan and cool. Add 1/2 cup pecans. Cut in squares or may be used as center for nut roll. If used for roll omit nuts. One pan makes 16 rolls. Or dip squares with nuts in chocolate for a delicious treat.
